Balsamic vinegar provides 88 kcal (368 kJ) per 100 g, which is unusual for a vinegar. Most vinegars are nearly calorie-free, but balsamic is made from cooked grape must, so it keeps about 15 g of natural sugar per 100 g. That sugar supplies almost all of its energy; there is no fat. In the small amounts used on salads, it adds very little.

Things worth knowing

  • One tablespoon (16 g) has about 14 kcal / 59 kJ, and a teaspoon (5.3 g) about 5 kcal / 20 kJ.
  • Other vinegars are much lower: cider vinegar is 21 kcal per 100 g, red wine vinegar 19 kcal and distilled white vinegar 18 kcal.
  • Balsamic glaze or reduction is cooked down and often sweetened, so it is noticeably higher in sugar and calories than the regular vinegar.
  • In a vinaigrette, the oil provides most of the energy: a tablespoon of olive oil has many times the calories of a tablespoon of balsamic.
