Things worth knowing

  • Leaner grades change the figure sharply: 95/5 is about 137 kcal per 100 g raw and 70/30 is about 332 kcal.
  • Pan-browning and draining the fat removes real calories. The same 85/15 mince falls to roughly 250 kcal per 100 g cooked, but cooked weight is around 70 percent of raw, so the actual portion loses energy overall.
  • Beef is one of the best absorbed sources of iron and zinc, because haem iron is taken up far more efficiently than plant iron.
