Things worth knowing

  • Wholemeal bread is nearly identical in calories, about 254 kcal per 100 g, but carries roughly three times the fibre and considerably more magnesium and zinc.
  • Bread is a major source of sodium in many diets: 100 g supplies around 490 mg, about 21 percent of the daily reference intake.
  • Toasting does not add calories. It drives off water, so a toasted slice is lighter but contains the same energy.
  • In the United States and United Kingdom, white flour is fortified, which is why enriched white bread shows high iron and B-vitamin values despite the bran and germ being removed.
